Choose clean, dry containers that can be made as air-tight as possible. Color-tinted glass is the best choice but any container that can be tightly sealed will work. Break up the herb in pieces that go easily into the chosen storage container, using your hand or knife and scissors for the harder herbs.

Label all the containers with the name of the herb and the date on which they were stored. Generally an herb will maintain its potency for two years, a good use of older herbs is to save them for use in a bath.
