Drying is an excellent, gentle method of preservation. It only
removes the water leaving the active ingrediants of the herb intact.
Collect
the fresh plants when it has not been raining and when they are not wet with
dew. Spread them loosely on a linen or cotton sheet stretched over a grate
in a shady, well-aired location. The temperature should not exceed 105 F and
exposure to direct sunlight will cause them to fade in color and destroy
their active ingrediants.
Turn the herbs over at least once every other day.
When it is so dry that it rustles and crumbles easily to touch it is ready
to be stored.
If working with roots a drying cabinet or kiln is recommended do the
extensive time it takes with the drying process.
